Tolar and I have been participating in a clean eating challenge this week. For the most part, everything we have eaten has been really delicious. I'm loving that we are getting rid of the processed junk and making better food choices.

There is one recipe that is way too good not to share with you!

We've been eating peanut butter energy bites for a snack (or as Tolar calls them - Power Balls) and they are so delicious. I actually feel like I'm eating a treat because they are so yummy. Even when we aren't doing the challenge, we will be adding these energy bites to our diet when we need something sweet.

I love that these energy bites are good for you and still taste amazing.

Clean Eating Energy Bites

Ingredients:
1 cup whole grain oats (not the instant kind)
1 cup coconut flakes (unsweetened)
1/2 cup natural peanut butter
1/3 cup honey
1 tsp vanilla extract

Instructions:
Combine all ingredients in a large mixing bowl and stir really well (or just use your hands to mix it all together). Chill in the fridge for 30 minutes, then roll into balls.
Yields = 20-24 balls


Notes:
-I found the unsweetened coconut flakes in the baking aisle of my local grocery store
-make sure to measure out the honey and peanut butter so you have enough sticky stuff for the balls to be held together
-for added nutrition you can add some flaxseed to the recipe

And that is it! Easy peasy. Seriously, this recipe takes no time at all to make. So the next time you want a treat, pop one of these energy bites. You will be satisfied and proud of yourself for making such a great choice for a treat.

  1. Yummy, these sound delicious! I've been ramping up my clean eating recently and these will be a nice sweet fix when I need em. I'll probably add some dark chocolate chips for a lil extra, heehee!
